Sidra Bourbon is one of Finca Las Flores’ experimental varieties, thoughtfully processed to improve the coffee’s complexity and clarity in flavor. Cherries undergo an 18-hour oxidation period before being sealed in barrels to undergo a two-stage anaerobic fermentation process. Washed after 36 hours before returning for 48 more hours of fermentation. Finally de-pulping through thermal shock then drying on raised beds.
